I would say MDT is a valuable skill to learn as it will make your life easier in the long run and what you learn can be transferred later on to SCCM if you ever move somewhere that uses this or deploy it yourself (SCCM uses a similar imaging setup to MDT and can actually be integrated with MDT itself to add in all the MDT features). MDT will let you do everything you currently do, the only thing is the default capture setup won't stop to let you make manual changes, to do this you have to make a small change at which point MDT will pause just before it starts sysprep so you can do manual changes to the image then you just click a shortcut when ready to start sysprep and capture. However it isn't that hard to get setup, there is lots of documentation and guides out there to help and generally speaking you can get a basic working setup done in an afternoon. The Elgato Video Capture lets you digitize video for Mac, PC, or iPad using USB 2.0. MDT does add some complexity to the imaging process but it counters this by giving you a lot more flexibility and generally making you life easier. You can integrate apps so they install during the image process so you can do things like install office to the base image since you know everyone needs it, and then setup MDT knows to install App1 when condition X is met (this can be anything from a WMI query to a SQL query to keyed into a specific serial number or based on network gateway, MDT is *very* flexible).

With MDT you have 1 master image (or any number of images if you really want to), and this can apply to all your PC's regardless of model as you store drivers in MDT and not in the image.
